Chappellet Signature Cabernet Sauvignon 2019

Drink it now or cellar for up to 30 years. It is recommended to decant it for at least one hour. Located in Napa Valley, Chappellet was founded in 1967 by Donn and Molly and is still a family-owned winery, today run by Cyril, Carissa, and Dominic. The winery has an outstanding reputation for its Cabernet Sauvignons. Widely regarded as the companys flagship wine, the Signature Cabernet Sauvignon is crafted with small additions of Petit Verdot, Malbec and Merlot. The grapes come from Pritchard Hill where the dry, rocky soils produce wines of great concentration. In the vineyard, pruning and crop thinning work promotes full ripeness and the development of good complexity of flavors in the final wine. The wine has a dark and dense color and a broad and powerful aromatic profile with notes of cherry and plum, cassis and sweet spices, cloves and chocolate, and some light hints of vanilla and toasted oak. On the palate, it is full-bodied and voluptuous, intense and concentrated. It has silky tannins and a strong character. The finish is very long and recalls aromas of red berries and coffee. It is a complex and elegant wine, which can be enjoyed now paired with BBQ beef brisket or left in the cellar for a couple of decades to enjoy its evolution.
