This Blanc de Blancs, from the winery named Ravents i Blanc, is a vibrant, elegant sparkling wine with a straw yellow hue and fine, persistent perlage. The nose is fresh and aromatic, with scents of green apple, pear, citrus zest, and white flowers. It is crafted from an intriguing mixture of local Spanish grapes: 50% Xarel-lo, 35% Macabeu, 12% Parellada, and 3% Malvasia de Sitges. Ravents i Blanc is a historic winery in the Peneds region of Catalonia, with a ludicrously long lineage of talented winemakers. The estate has been in the Raventos family since 1497, and it is currently led by Pepe Ravents, who represents the 21st generation of his family to toil in the vineyards. The estate is planted with indigenous grape varieties, perfectly suited to the regions microclimate and chalky soils. On the palate, it is crisp and refreshing reminiscent of the seaside. It showcases flavours of lemon, lime, and green apple skin, which are complemented by subtle minerality and a hint of brioche. The grapes were harvested from a 40-year-old vineyard the Vinya del Llac. This Blanc de Blancs will be perfect as an aperitif or paired with seafood dishes, such as oysters, shrimp, or sushi.
