The delicate hue of this charming ros is named after the Oeil de Perdrix or partridge's eye, a particularly pale shade of pink which is typical of the ethereal ros wines from the south of France. This ros is made in California according to traditional Provencal winemaking techniques which have been used in that part of France for generations. To create a ros which is both fresh and full of flavour, the grape must is left to macerate with the skins for a short period which gives the wine its characteristic light pink hue. The must is then fermented in a temperature-controlled tank and then aged on the lees for two months to add a soft, smooth texture while preserving the delicate aromatics. On the nose there are attractive hints of wild strawberries, red cherries, mint and dried Mediterranean herbs. Take a sip and youll be rewarded with a mouthwatering freshness, light and elegant body, and lingering red fruit flavours seasoned with hints of zesty mandarin and pomegranate blossom.
